Muldrow Mud Cake
   

This cake is very rich and very heavy. I got it off the internet somewhere. It is supposed to be a clone recipe of a cake made at the North Face Lodge at Denali National Park, AK. The original recipe called for 1 1/2 C coffee and 1/4 C Kahlua. I changed it to use 1 3/4 C coffee.

                                   

Ingredients
1 3/4 C - Strong Coffee
5 oz - Unsweetened Chocolate
1 C - Butter
2 C - Sugar
    2 C - Unbleached Flour
1 t - Baking Soda
1/4 t - Salt
2 - Eggs
1 t - Vanilla
1 Recipe - Thick Chocolate Glaze



Instructions
  • Preheat oven to 275°F
  • Grease Bundt pan or 10" Springform and dust with sifted cocoa
  • Heat coffee over simmering water or in microwave
  • Add the chocolate and butter and stir until melted
  • When mixture is smooth, add the sugar and stir until dissolved
  • Remove from heat and cool until lukewarm
  • Sift flour, baking soda and salt together
  • Gradually add the coffee-chocolate mixture, beating well after each addition to avoid lumps in the batter
  • Add the eggs and vanilla
  • Beat with an electric mixer at medium speed for 2 minutes
  • Pour into the prepared pan
  • Bake for about 1 1/2 hours, or until tester comes out clean
  • Let rest for 10 minutes, invert onto a cake rack and cool
  • While cake is cooling, prepare the chocolate glaze and glaze the cake.
