Cream And Cookies
   

   Be sure and dry the cherries very well so they won't 'bleed' into the whipped cream.

                                   

Ingredients
1 Recipe - Meringue Cookies
       (Made without nuts and chips)
1 Doz - Amaretti Cookies
       or bought Almond Macaroons
1 Small Jar - Maraschino Cherries
1/2 C - Flaked Almonds
2 pints - Whipping Cream
1/4 C - Powdered Sugar



Instructions
  • Toast the almonds.
  • Drain cherries and dry on paper towels.
  • Chop into small pieces and dry again on fresh towels.
  • Whip cream until soft peaks form.
  • Slowly add sugar and whip until firm peaks form.
  • Crumble the meringue and almond cookies over a plate and put the pieces in the bowl with the cream. (You don't want crumbs, and also don't want really large pieces.)
  • Sprinkle the almonds and cherries over the cookies.
  • Gently fold everything together, making sure everything is well distributed.
  • Place in a glass serving dish, cover with plastic wrap and refrigerate for at least 2 hours, or preferably overnight.
