Vanilla Wafers
   

Claxton Photography Vanilla Wafers I make these to use in banana pudding.
This recipe makes about 70 cookies.

                                   

Ingredients
7 oz - All-Purpose Flour
3/4 t - Baking Powder
1/2 t - Salt
4 oz - Unsalted butter
3 1/2 oz - Sugar
1 - Egg, Large
4 t - Vanilla Extract
1 T - Milk



Instructions
  • Preheat the oven to 350°
  • Sift together flour, baking powder, and salt in a small bowl
  • Cream butter and sugar in the bowl of a stand mixer on medium speed for 2 minutes, stopping to scrape down the sides of the bowl after 1 minute
  • Add the egg and mix on medium speed for 30 seconds and scrape down the sides of the mixer bowl
  • Add vanilla and milk and blend on low speed for 15 seconds
  • Add the flour mixture and mix on low speed just to incorporate
  • Chill batter in the refrigerator for at 10 minutes or more before scooping
  • Scoop batter in teaspoon-sized balls and arrange them on 2 parchment paper-lined half sheet pans
  • Slightly flatten each ball with the heel of your hand
  • Bake until golden brown, about 15 to 20 minutes, rotating the pans halfway through the baking
  • Cool completely on a cooling rack before removing the cookies from the pan
