Seven Minute Coconut Frosting
   

A sauce pan and medium sized bowl can be used for the double boiler. Just make sure that the water is well below the bottom of the bowl. If it is humid you might want to continue the 5 minute portion of the beating by another 15 to 30 seconds. Sometimes I do this anyway because it seems to help the frosting set up better. 12 oz of sugar is approximately 1 3/4 C.

                                   

Ingredients
12 oz - Sugar
1/2 t - Cream of Tartar
1/4 t - Kosher Salt
1/3 C - Coconut Water
3 - Large Egg Whites
1 t - Coconut Extract
1/2 t - Vanilla Extract



Instructions
  • Bring water in bottom of double boiler to a boil over high heat and reduce heat to maintain a simmer.
  • While bringing water to a boil measure out sugar, cream of tartar and salt into top of double boiler and whisk together.
  • Add coconut water and egg whites to the sugar mixture in top of double boiler.
  • Set over simmering water and beat on low for 1 minute.
  • Increase speed to high and beat for 5 more minutes.
  • Remove top of double boiler from heat, add coconut and vanilla extracts and continue to beat on high for 1 more minute.
  • Allow frosting to sit for at least 5 minutes before using.
