Russian Cherry Teacakes
   

These cookies flatten slightly but don't really spread as they cook. You can place them fairly closely on the cookie sheets. This recipe makes about 3 1/2 to 4 dozen cookies.

                                   

Ingredients
1 C - Unsalted Butter
1/2 C - Confectioner's Sugar
1 t - Vanilla
2 1/4 C - All-Purpose Flour
1/4 t - Salt
3/4 C - Pecans, finely chopped
1/2 C - Candied Cherries, chopped



Instructions
  • Cream butter, sugar and vanilla thoroughly.
  • Sift together the flour and salt and mix with the butter/sugar/vanilla mixture.
  • Fold in the nuts and cherries.
  • Chill the dough for 1 hour.
  • Preheat oven to 400°F
  • Roll the dough into 1 inch balls and place on ungreased cookie sheet.
  • Bake until set but not brown, about 10 minutes.
  • While still warm, roll the cookies in confectioner's sugar and cool.
  • Roll in confectioner's sugar again and bake again for 10 to 12 minutes.
