Pumpkin Bread
   

   This recipe is from the "Our Family Cookbook" from College Baptist Church, Big Spring, TX (1984). It is from Ramona Herbert.
   This recipe will make 7 small loaves of bread. If making small loaves, bake for about 45 minutes.

                                   

Ingredients
3 1/2 C - Sifted Flour
2 t - Soda
1 1/2 C - White Sugar
1 1/2 t - Salt
1 t - Cinnamon
1 t - Nutmeg
    1 Can - Pumpkin Pie Mix
1 C - Margarine, melted
1 1/2 C - Brown Sugar
4 - Eggs
2/3 C - Water



Instructions
  • Preheat oven to 350°F.
  • Grease 2 standard loaf pans.
  • Sift dry ingredients into mixing bowl, whisk and set aside.
  • Mix wet ingredients, whisking until blended.
  • Add wet ingredients to dry, whisking until blended. Should be a little lumpy.
  • Divide into prepared loaf pans.
  • Bake for about 1 hour or until a toothpick comes out clean.
  • Remove from oven and cool for about 10 minutes.
  • Remove from pans and cool completely on wire rack.
