Pineapple Pecan Bread
   

If you don't have crushed pineapple, pineapple tidbits work well. If you don't have oranges to grate the peel from, then you can use orange extract.

                                   

Ingredients
2 1/3 C - Flour
1 C - Pecans, chopped
1 C - Dates, chopped
1 T - Orange Peel, grated
1 t - Baking Powder
1 t - Baking Soda
    1/4 t - Salt
1/4 C - Butter, softened
3/4 C - Sugar
1 - Egg
1 Can (8 1/4 oz) - Crushed Pineapple



Instructions
  • Grease and flour 9"x5" loaf pan
  • Pre heat oven to 350°F
  • Combine 1 T flour with the pecans, dates and orange peel
  • Combine remaining flour with baking powder, baking soda and salt
  • Cream butter and sugar until fluffy
  • Add the egg and beat well
  • Beat in 1/3 flour mixture, 1/2 pineapple; Repeat until all flour and pineapple is used
  • Stir in fruit and nuts
  • Turn into prepared loaf pan
  • Bake for 65 minutes or until loaf tests done
  • Remove from oven and let stand 5 minutes on rack
  • Turn out onto wire rack to finish cooling
