Peanut Butter Fudge
   

While this isn't a real, cooked fudge, the texture is 'fudgy' so that's what it's called. After the candy sets up it can be stored out of the refrigerator. It won't soften. It's never lasted very long, but it's stayed firm for almost 2 days.

                                   

Ingredients
1 C - Butter (2 sticks)
1 C - Peanut Butter
1 t - Vanilla
1 lb - Powdered Sugar



Instructions
  • Line an 8x8 baking dish with plastic wrap
  • Combine butter and peanut butter in a microwave safe bowl, cover with plastic wrap and poke a few holes in it
  • Microwave on high for 2 minutes, stir and microwave for 2 more minutes
  • Add vanilla and powdered sugar and stir until it becomes stiff and loses it's gloss
  • Pack into the prepared paking dish and smooth.
  • Cover with plastic wrap and refrigerate until set (several hours)
  • Remove from pan, cut into pieces with a large chef's knife
