Orange Devil's Food Cake
   

Whipped cream and/or orange sections can be used to garnish the cake. If you want to spend a little more time, simmer thin orange slices (peel and all) in a sugar syrup until the peel turns translucent and use these slices for garnishing. This is supposed to be a moist cake, so be sure that you don't over-cook it.

                                   

Ingredients
6 - Oranges (Navel or Valencia)
          (1/2C + 2t Juice
          2T Zest)
3 oz - Unsweetened Chocolate
1 1/2 C - Sugar
1 t - Cinnamon
1 t - Baking Soda
1/2 C - Vegetable Shortening
2 - Eggs
1 C - Milk
2 C - Flour



Instructions
  • Preheat oven to 325°F
  • Butter a bundt or tube pan
  • Melt chocolate in top of double boiler
  • Add 1/2C sugar, 1/2C orange juice and cinnamon
  • Stir to dissolve, remove from heat and cool
  • Mix baking soda with remaining 2t orange juice
  • Cream shortening with remaining 1C sugar until very light
  • Add eggs one at a time beating well after each
  • Add milk and flour alternately until just incorporated
  • Add baking soda mixture, orange zest and chocolate, stirring until incorporated
  • Pour batter into pan
  • Bake for about 1 hour or until cake tests done
  • Cool on rack for 15 minutes, turn out and cool completely
