Claxton Photography: Miscellaneous &emdash; Melt Away Gems - 2009 You can add 1/2 C or more of mixed nuts as a variation. I've used almonds, pecans and walnuts and probably like the walnuts most. This recipe makes about 36 cookies.


1 C - Flour
1/2 C - Cornstarch
1/2 C - Confectioners Sugar
3/4 C - Butter
1 t - Vanilla

  • Combine flour, cornstarch and sugar in a medium bowl
  • In a large bowl beat butter and vanilla until smooth
  • Beat flour mixture into butter until well blended
  • Refrigerate dough for an hour or so to firm it up
  • Scoop and shape dough into 1 inch balls
  • Place 2 inches apart on an ungreased cookie sheet and flatten with a floured fork
  • Bake at 375° for 10-12 minutes or until edges brown lightly
  • Cool on wire racks before storing in a tightly covered container
