Fricke's Famous Fudge
   

This recipe makes a soft fudge that is pretty sweet and rich. The recipe calls for a buttered 8x8 baking pan, but I use plastic wrap and line the pan with it. It makes it easier to turn it out for cutting. I cover it with plastic wrap to let it cool and when it is still a little bit pliable I turn it out and peel off the plastic and cut it. The nuts are optional.

                                   

Ingredients
2 T - Butter
2/3 C - Evaporated Milk
1 1/2 C - Sugar
1/4 t - Salt
2 C - Miniature Marshmallows
1 1/2 C - Semi-sweet Chocolate Chips
1 t - Vanilla
1/2 C - Chopped Walnuts or Pecans



Instructions
  • Butter or line with plastic wrap, an 8x8 baking dish and set aside.
  • In a medium sized sauce pan, combine butter, evaporated milk, sugar and salt.
  • Bring to a boil over medium heat, stirring constantly.
  • Boil for 4-5 minutes.
  • Remove the pot from the heat and stir in marshmallows, chocolate chips, vanilla and nuts.
  • Mix vigorously for 1 minute, or until marshmallows are melted.
  • Pour into buttered or lined baking dish and chill until firm.
  • Cut in small squares (very rich).
