Flag Cake
   

     
This cake is really moist from the jello poured over it. The amount of fruit required is very variable. It can depend on how many bad fruits you can't use that are in the container. Keep the cake in the refrigerator until serving. If it is left out, the jello will liquify and make the cake soupy. If you put it back in the refrigerator it will firm back up. This is an 'impressionistic' cake. It only has 9 stripes. It is also difficult to make 50 stars on the blueberry square. Don't worry about it. It's not supposed to be a photograph. It still tastes and looks good. Tres Leches Cake makes a good base for this cake also.

                                   

Ingredients
1 Box Strawberry Cake Mix
1 Box Strawberry Gelatin
1 Pint Blueberries
3 Pints Strawberries
1 Container Frozen Whipped Topping (thawed)
1/2 C sugar (optional)
1/4 C water (optional)
Red Food Coloring (optional)
Strawberry Flavoring (optional)



Instructions
  • Prepare cake mix and bake in 9x13 baking pan.
  • Cool cake while preparing gelatin.
  • Prepare gelatin using 1/2 C less liquid than called for.
  • While gelatin is still hot combine with 1/2 pint of strawberries in blender and puree until smooth.
  • Poke holes in cake and pour gelatin over the top and allow to soak in.
  • Cool cake in refrigerator until cold.
  • Using a knife, draw outline of flag on top of cake to use as a pattern when arranging fruit. Use 4 or 5 rows of strawberries. The first and last stripes are red (strawberries).
  • Be sure while making rows to leave the space open for the blueberries to make the star field.
  • Slice strawberries in half and place cut side down on cake to make the red stripes.
  • If, like mine sometimes are, your strawberries are not really red and ripe make the following glaze and paint on the strawberries now.
    • Boil the 1/2 C sugar and 1/4 C water until it is a thick syrup consistancy.
    • Combine syrup, 1/2 pint strawberries, food coloring and strawberry flavoring in a blender until smooth.
    • Cool before painting on strawberry stripes.
  • Using pastry bag and star tube, pipe a zig zag of whipped topping between strawberry rows to make white stripes.
  • Fill the star field rectangle with blueberries. Use enough to cover the cake below. Use maybe two layers.
  • Pipe some stars, using the same bag and tip as for the white stripes, on top of the blueberries.
