Elite Pound Cake
   

   This is a really good pound cake recipe. I got it from "All Occasion Cooking" by Kay Shaw. When I made it, I followed the times given for baking and the cake turned out a little 'dry.' It might not have been too dry, but I like pound cakes to be a little on the moist side. Check it to see if it is done before the time is up.

                                   

Ingredients
9 - Medium Eggs
3/4 lb - Soft Butter
3 C - Sugar
3 3/4 C - Flour
1/4 C - Cornstarch
1/2 t - Baking Powder
1/2 t - Salt
    1/4 t - Mace
1/4 t - Cardamom
4 T - Evaporated Milk
2 t - Lemon Extract
1/2 t - Almond Extract
1/4 t - Vanilla Extract



Instructions
  • Grease and Flour 10" bundt pan
  • Pre heat oven to 325°
  • Beat eggs 3 to 4 minutes in a large mixer bowl
  • Add butter and sugar and beat 4 minutes
  • Sift together flour, cornstarch, baking powder, salt, mace and cardamom
  • Mix together evaporated milk, lemon, almond and vanilla extracts
  • Mix flour and milk mixtures into egg mixture beginning and ending with dry ingredients
  • Pour into bundt pan
  • Bake for 30 minutes
  • Reduce heat to 300°F and bake 1 hour more
  • Turn off oven and allow to remain in oven for 15 minutes
  • Cool 15 minutes and remove from pan
  • If desired, glaze while warm with orange or lemon glaze
