Easy Cobbler
   

This recipe is from Favorite Recipes published by the Howard County Junior College District Women's Association in 1988. It was submitted by Patsy Pettitt. To take to pot lucks, I like to triple the the crust and double the fruit amounts. Use a 10x15" baking pan and bake for about 70 minutes if you do this. If you do multiply it like this, the pan will be very full. Also, I like to save out a little of the sugar and sprinkle it over the top, about half way through baking. This gives kind of a carmelly crunchy crust on top.

                                   

Ingredients
Fruit Mixture:
1 Can (29 oz) - Fruit
1 C - Sugar
1/2 stick - Oleo
    Batter Mixture:
1/2 stick - Oleo
1/2 C - Flour
1/2 C - Sugar
1/2 C - Milk
1 t - Baking Powder



Instructions
  • Preheat oven to 350°F.
  • Grease a 9x9" baking dish with some of the oleo from the recipe.
  • Mix fruit, sugar and oleo in a sauce pan and heat to boiling.
  • While mixture heats up prepare the batter.
    • Melt 1/2 stick of oleo.
    • Mix flour, sugar, milk and oleo until fairly smooth.
    • Pour into baking dish.
  • When fruit mixture reaches a boil, pour over batter in the baking dish.
  • Bake for 50 minutes, or until crust is nicely browned and filling is bubbly.
