Corn Casserole
   

Brenda got this recipe from Lanelle Morgan when she worked at First National Bank. She makes the 3X version for family get-togethers. The 8X version was the amount used for bank dinners. The recipe calls for cooking the corn according to the package directions, but she normally under-cooks it just a little since it cooks in the oven more, after the rest of the ingredients are added.

                                   

Ingredients
 
Frozen Corn
Cream Cheese
Butter
Chopped Green Chilies
Chopped Pimentos
Salt and Pepper
   1X Recipe
1 Small Pkg (10-12 oz)
1 Small Pkg (3 oz)
1 Stick
1 Small Can
1 Small Jar
To Taste
   3X Recipe
3 Small Pkg (10-12 oz)
1 Large Pkg (8 oz)
1 1/2 Sticks
1 Large Can (7 oz)
3 Small Jars
To Taste
   8X Recipe
10 Small Pkg (10-12 oz)
4 Large Pkg (8 oz)
5 Sticks
10 Small Cans (7 oz)
4 Large Jars
To Taste



Instructions
  • Cook corn as directed on package
  • Pre-heat oven to 350°
  • Mix all ingredients together in baking container
  • Bake for about 20 to 30 minutes (until cheese is melted and it bubbles)
  • Don't overcook
