Coconut Lime Bars
   

The recipe doesn't call for it, but I usually put some lime zest into the crust.

                                   

Ingredients
Crust
2 C - Flour
4 T - Sugar
1/8 t - Salt
10 1/2 T - Butter
    Filling
4 - Eggs, Beaten
1 C - Almonds, Chopped
2 C - Light Brown Sugar
3 C - Sweetened Coconut
Glaze
1 1/2 C - Powdered Sugar
2 T - Lime Juice
2 t - Lime Zest



Instructions
  • Preheat oven to 350°F
  • Crust:
    • Combine flour, sugar and salt in a bowl
    • Cut in butter until mixture resembles coarse meal
    • Press crust into ungreased 10"x15" baking pan
    • Bake for 15 minutes or until golden brown
  • Filling:
    • Mix eggs, nuts, brown sugar and coconut until well blended
    • Spread over baked crust
    • Bake about 30 minutes or until set
    • While still warm, loosen edges with a metal spatula
  • Glaze:
    • Mix together the powdered sugar, lime juice and zest with a fork
    • Quickly spread the glaze all over the top with a rubber spatula while still warm
  • Let cool to room temperature before cutting
  • Make 11 cuts crossways and 3 cuts lengthwise to make 33 bars
