Christmas Beef Bourguignonne
(Sung to the Christmas Carol)

Ingredients
12 Stems of Parsley
11 Black Peppercorns
10 Onions, Quartered
9 Carrots, Chunky
8 Cups of Red Wine
7 Cups of Beef Stock
6 Cloves of Garlic
5 teaspoons Rosemary & Thyme
4 Allspice Berries
      (and/or Whole Cloves (Not Part Of Song))
3 Bay Leaves
2 Ounces Brandy
And an Eye of Round, About 6 Pounds



Instructions
  • De-fat meat, cut in chunks, marinate overnight in wine, carrots, onions, parsley, peppercorns, garlic, rosemary, thyme, allspice, bay leaves and brandy
  • Drain meat, strain and reserve marinade
  • In a pan brown 2 strips of chopped bacon and put aside
  • Brown 1 pound chopped mushrooms, put aside
  • Brown 12 pickling onions, put aside
  • Dust chunks of meat with flour, and brown
  • Add 2 tablespoons tomato paste, cook to brown
  • Add back in the carrots, onions, mushrooms and reserved marinade
  • Cook 4 hours in a 275°F oven, strain, cook down juices to thicken
  • Add everything back in and stir gently through
