Cheesy Cherry Cake
With Chocolate Glaze
   

                                   

Ingredients
For Cake:
1/2 C chopped Pecans
8 oz Cream Cheese
1 C Butter or Margarine
1 1/2 C Sugar
1 1/2 t Vanilla
4 Eggs
2 1/4 C sifted Flour
1 1/2 t Baking Powder
3/4 C drained and chopped
         Maraschino Cherries
1/2 C chopped Walnuts
    For Glaze:
1/2 C Cream
5 oz Semisweet Chocolate



Instructions
  • Preheat oven to 325°
  • Season 12 cup bundt pan and sprinkle with the pecans.
  • In large bowl, thoroughly blend cream cheese, butter, sugar and vanilla.
  • Add eggs one at a time, mixing well after each addition.
  • Sift together 2 cups of the flour and baking powder and add gradually to creamed mixture.
  • Combine remaining flour with cherries and walnuts then fold into batter.
  • Pour batter into pan and bake for 60-65 minutes or until cake tests done.
  • Cool in pan 10-15 minutes and turn out on rack to complete cooling.
  • Heat cream in sauce pan until simmering then remove from heat.
  • Add chocolate and let stand for 5 minutes to melt.
  • Stir until smooth and of desired consistency.
  • Drizzle over cake and allow to run down sides.
