Black Magic Cake
   

This is a very strong, dark and moist chocolate cake. If you have problems unmolding the cakes, it helps to line the bottom of the pans with parchment paper and even add two strips of paper under the circles. They serve as handles to try and get the cakes out. I like cooking cakes a little 'under done' and sometimes it's hard to get them out in one piece.

                                   

Ingredients
1 3/4 C Flour
2 C Sugar
3/4 C Cocoa Powder
2 t Baking Soda
1 t Baking Powder
1 t Salt
    2 Eggs
1 C Strong Coffee
1 C Buttermilk
1/2 C Vegetable Oil
1 t Vanilla Extract



Instructions
  • Preheat oven to 350°F.
  • Grease and flour two 9 inch round or one 9x13 inch pan.
  • In large bowl combine all dry ingredients.
  • Make a well in the center.
  • Add all wet ingredients.
  • Beat for 2 minutes on medium speed. Batter will be thin.
  • Pour into prepared pans and bake for 30 to 40 minutes,
    or until toothpick inserted into center of cake comes out clean.
  • Cool for 10 minutes then unmold and finish cooling on racks.
