Bean Crackers
   

If you want, you can sprinkle the crackers with garlic salt, onion salt, salt, cinnamon sugar or any other flavorings, herbs or spices you might want before baking. You can also incorporate any of these flavorings into the dough.

                                   

Ingredients
1C - Cooked Pinto Beans
1t - Baking Powder
1 - Egg
2T - Salad Oil
1C - Flour



Instructions
  • Preheat oven to 425°F
  • Puree beans in food processor, scraping down as needed
  • Add all other ingredients, including flavorings if desired
  • Process until well blended, scraping down as needed
  • Roll out to 1/8" thickness, or less, on floured surface and score into 1 1/2" squares
  • Bake for about 10 minutes or until golden brown
  • Cool and break apart at scored lines.
