Basic Griddle Cakes
   

This recipe is from Meta Given's Modern Encyclopedia of Cooking. I can't find a publication date, but it is an old book. It is one of the fluffiest, best tasting pancakes I've ever had. The Vanilla and Almond are my additions, and I think make it taste and smell better. Just leave them out if you don't wish to use them.

                                   

Ingredients
2C All Purpose Flour
5t Baking Powder
1t Salt
3T Sugar
    2 Eggs
2C Milk
1/3C Melted Shortening
1/2t Vanilla
1/4t Almond Extract
Yields about 25 cakes.



Instructions
  • Sift Flour, measure, and resift with baking powder, salt and sugar.
  • Beat eggs in mixing bowl, add milk and mix.
  • Stir in melted shortening.
  • Add vanilla and almond extracts (if using) and combine.
  • Add flour mixture all at once and beat until perfectly smooth.
  • Let stand for 10 or 15 minutes.
  • Heat griddle to moderately hot, or a temperature of 300 - 325 on a griddle thermometer.
  • Pour out 1/4C batter for each cake.
  • Cook until top side is full of air bubbles and under side is golden brown, then turn and cook until other side is brown. Turn only once.
