Tony Claxton's Recipes Banana Cake |
Brenda has made this cake for years and it always is good. She doesn't remember for sure which cook book it came out of. The recipe didn't say what to do with the shortening. We've always thought we should, maybe, put it in with the wet ingredients and beat it in at the same time. When I make the cake I mix the shortening into the dry ingredients with the mixer, kind of like with biscuits, before adding the wet ingredients. I leave the shortening in very small pieces. Less than pea-size. |

2C - Flour 1 1/2 C - Sugar 1 1/2 t - Baking Powder 3/4 t - Baking Soda 1/2 t - Salt |
1 C - Mashed Bananas 1/2 C - Buttermilk 1/2 C - Shortening 2 - Eggs 1 t - Vanilla 1/2 t - Banana Extract |

1/3 C - Margarine 4 1/2 C - Powdered Sugar 1/4 C - Milk 1 1/2 t - Vanilla 1/2 t - Banana Extract |
