Banana Cake
   

Brenda has made this cake for years and it always is good. She doesn't remember for sure which cook book it came out of. The recipe didn't say what to do with the shortening. We've always thought we should, maybe, put it in with the wet ingredients and beat it in at the same time. When I make the cake I mix the shortening into the dry ingredients with the mixer, kind of like with biscuits, before adding the wet ingredients. I leave the shortening in very small pieces. Less than pea-size.

                                   

Ingredients - Cake
Dry:

2C - Flour
1 1/2 C - Sugar
1 1/2 t - Baking Powder
3/4 t - Baking Soda
1/2 t - Salt
   
Wet:

1 C - Mashed Bananas
1/2 C - Buttermilk
1/2 C - Shortening
2 - Eggs
1 t - Vanilla
1/2 t - Banana Extract

Ingredients - Frosting
1/3 C - Margarine
4 1/2 C - Powdered Sugar
1/4 C - Milk
1 1/2 t - Vanilla
1/2 t - Banana Extract



Instructions
    Cake:
  • Preheat oven to 350° and prepare a 9x13 inch baking pan
  • Combine all dry ingredients
  • Combine all wet ingredients, add to dry, then
  • Beat on low speed until combined, then on medium for 3 minutes
  • Bake for 30 to 35 minutes
  • Allow to cool completely before frosting
  • Frosting:
  • Beat all ingredients together until light and fluffy
  • Frost the cake
  • Eat the cake!
