Amish Sugar Cookies
   

These cookies are reminiscent of Mexican Wedding Cookies or Russian Tea Cakes except that they are a little more crunchy/crumbly. This dough can be very soft and hard to press out, so it helps sometimes to chill it a little while in the refrigerator.
Makes 7 dozen

                                   

Ingredients
4 1/2 C - Sifted Flour
1 t - Baking Soda
1 t - Cream of Tartar
1 C - Butter
1 C - Cooking Oil
1 C - Sugar
1 C - Sifted Powdered Sugar
2 - Eggs
1 t - Vanilla
1 C - Chopped Walnuts
Sugar (for pressing cookies)



Instructions
  • Preheat oven to 375°F.
  • Grease baking sheets, or use parchment paper.
  • Sift together flour, baking soda and cream of tartar and set aside.
  • Cream together butter, oil, sugar and powdered sugar in mixing bowl until light and fluffy. If using electric mixer, use medium speed.
  • Add eggs, one at a time, beating well after each one.
  • Blend in vanilla.
  • Gradually stir dry ingredients into creamed mixture, mixing well.
  • Add walnuts.
  • Drop mixture by rounded teaspoonfuls, about 3 inches apart, on baking sheets.
  • Flatten each ball with bottom of greased drinking glass dipped in sugar.
  • Bake for about 10 minutes or until lightly browned around the edges.
  • Cool on rack.
